Hmmm - sweet surrender...

I'm not a good example of your die-hard sweet tooth!  That's Paddy's job.  But, you must admit, there's nothing nicer than something delicate and sweet to end a wonderful meal - even just one tempting mouthful...  Hmmm!

No one wants to spend the entire evening in the kitchen during a dinner party!  What punishment!  Here's something you can prepare a few hours in advance, cook in a few minutes (literally), and dress for success.

Fried Bananas served with Ginger Caramel Sauce

Serves 4 - 6
Preparation time - 15 minutes max
Cooking time - 10 minutes
Difficulty - so easy!
Can be prepared beforehand and quickly put together before serving

Ingredients
4-6 ripe bananas (one per person)
egg, beaten
70g ground pecan nuts
40g bread crumbs

Sauce
20g butter
140g white sugar
15ml rum
40g grated ginger
200ml coconut milk

Method
1. Prepare the caramel sauce - melt butter and sugar in a saucepan. Allow to caramelise slowly.
2. Then add rum, grated ginger and coconut milk. Allow to boil until mixture is slightly thickened.  Set aside.
3. Leave the bananas whole.  
4. Dip each one first into the egg and then coat in a mixture of the pecan nuts and bread crumbs.  Allow to set (it can be left for an hour or two)
5. Deep fry bananas until golden brown.
6. Heat the sauce over a low heat when ready to serve. 
7. Serve in a pancake.  Or serve sauce with a scoop of vanilla ice-cream (optional).

I recently put my heart behind a charity that I feel passionate about!  The Peninsula School Feeding Association turns 50 this year, and they have been doing amazing work supporting their mantra: You can't teach a hungry child!  I was at one of the schools in their programme a few weeks ago, with a huge bag of chocolates...  What a rewarding few hours!  I urge you to get involved in some way or another.  You can start by sponsoring food for one child for a year at a mere R205!  We all deserve a meal!
