A wish for you!

This is such a crazy time in everybody's calender...  A trip to the supermarket turns into an obstacle course, and one almost needs a special licence to 'drive' your trolley over this period!

But, in and amongst all this chaos is also the knowing that we have gotten to the end of a year, and that a new beginning awaits...  So, my wish to you is that, whatever this past year held will be left behind, and that a new journey filled with amazing and exciting adventures begins here.

I will include an idea I got from the December issue of Taste magazine - it is simple, easy, quick, and oh-so-impressive...

I call this a Christmas Caprese Wreath...

Ingredients
Small tomatoes of all shapes and sizes
Bocconcini or (what Woollies terms 'Pearl Mozzarella')
Basil pesto
Basil leaves
Lemon wedges
A good olive oil
Freshly squeezed lemon juice
Maldon sea salt
Freshly ground black pepper

Method
1. Cut the bigger tomatoes into slices.
2. Arrange the tomatoes in a circle around a plate.
3. Add the mozzarella balls - see pic...
4. 'Pour' the pesto over in blobs, squeeze a little lemon juice over and arrange the lemon wedges and basil leaves onto the platter - see pic...
5. Drizzle with olive oil, and pour some in the middle of your wreath.
6. Add maldon sea salt and freshly ground pepper.

Now add a warm loaf of bread, and allow people to help themselves.  It's a very good looking salad, a great way to begin a meal, and you will impress your guests - guaranteed!
